Valorization of CTC tea waste through kombucha production and insight into GC-MS based metabolomics

This research paper is aimed to deliver a novel approach prepare popular probiotic beverage i.e., kombucha from infusion of tea waste valorize the by-product industry. In this study, GC-MS based in combination with preliminary vitro biochemical analysis was used investigate metabolic profiles, especially antioxidant compounds produced during fermentation infusion. Waste found be rich xanthosine, precursor caffeine while fermented sample seen more bioactive secondary metabolites derived substrate xanthosine and sucrose. addition, metabolomics helped propose biosynthesis pathways metabolome which suggest later breakdown other components into microbial process. These findings are expected useful for further studies on production formulations waste.
